Just when I thought I was finished with snacks for the Super Bowl I decided I needed one more quick, yummy recipe that was just too dog-gone-good to pass up.
Here's an e-z, cheezzy thing to whip up fast and you probably have the ingredients in the refrigerator somewhere.
Scoop it into a bowl, pack it into a crock or mold it into a football shape. It's that easy!
Serve with your favorite hearty crackers, crusty bread or bagels.
This is yummy stuff and goes GREAT with beer!
Bacon and Horseradish Cheese
Makes 2-1/2 cups cheese spread
1 (12-16 oz.) package bacon
1 small onion, finely chopped (about 1/2 cup)
2 (8 oz.) packages cream cheese (regular preferred but low fat or neuchatel will work, too)2 teaspoons white horseradish (or to taste)
Salt and pepper (to taste)
Cook the bacon over low heat till crisp. Be very careful not to burn it.
Remove the cooked bacon to a rack or paper towel lined plate to drain and cool.
Remove all but 3 tablespoons of the bacon fat from the pan. (If your bacon gave off less than 3 tablespoons of fat, add enough butter to the pan to make up the difference. Margarine or oil are not recommended.)

Meanwhile, using an electric mixer, beat cream cheese till fluffy - about 3 minutes.
By hand, fold in cooled onions plus any fat and cracklings remaining in the pan (scrape out the pan well).
Using your fingers, crumble in the bacon and stir in the horseradish.
Taste. Stir in salt and pepper if desired.
Refrigerate to blend flavors.
